Marc de Chardonnay
How is it made?
• Collecting pressed grapes (= pomace/skins, Afrikaans doppe) from Springfield’s (Wild Yeast) Chardonnay (directly from the press into our fermentation tanks, avoiding any contamination).
• Fermentation of grape skin (via attached fruit sugar) over a period of 2 –3 weeks.
• Slow & careful double distillation with our combined pot/column still.
• Gradual dilution with water over a period of 3 – 4 months to bottling strength.
How does it taste?
Fragrant and delicate Grappa. Surprisingly soft and fresh, without the typical “burn” on the swallow. Flavourful, hint of typical buttery Chardonnay taste.
How to enjoy?
• Best enjoyed as Digestif after dinner, either on its own or with an espresso or coffee
• Pairs nicely with a Chardonnay wine (ideally Springfield’s Wild Yeast Chardonnay) served with main course.
• Best served at room temperature.

- Standard Cape Town – R99.00 per 1 case, for 2 cases or more free delivery per winery.
- Standard South Africa – R199.00 per 1 case, for 2 cases or more free delivery per winery.
- Farms, Game Farms, Townships and very outlying areas – R550.00 per order.
