How is it made?
• Careful Collection of the wine lees from Springfield’s Cab Sauvignon Methode Ancienne (wine racking after 12 months barrel maturation)
• Slow & careful double distillation with our combined pot/column still
• Gradual dilution with water over a period of 3 – 4 months to bottling strength
How does it taste?
Very unusual and pleasant vanilla flavour at the nose. Soft on the palate with the impression of a cedary cassis note. Lovely dry, slightly oily and intensive finish.
How to enjoy?
• Best enjoyed as Digestif after dinner, either on its own or with an espresso or coffee
• Serve at room temperature
